Thanks for Your Support
To the more than 9000 guests that have visited the newly renovated Broad Axe Tavern in our opening month, On behalf of myself, my partners and my entire staff, I would like to thank you for the support and your great response to the re-opening of the Tavern and for all of your feedback that you have given us over the past 30 days. We had no idea that your curiosity would warrant such an overwhelming influx of locals looking to see what the Broad Axe Tavern has become. After our first month of business things are now running smoothly. We have been constantly fine tuning and tweaking what we are doing with guest services and our food and beverage procedures to try to make your visit to the Broad Axe Tavern an enjoyable one. We are all very grateful for all of your praises on the renovation, the positive response towards the menu, the service staff and the overall concept of the Tavern. Though there has been a lot of positive feedback, I do know and realize that there have been a few issues that have been brought to my attention that we need to address. For all of you who have left us with thoughts on ways to enhance your dining experience we want you to know that we value your comments and suggestions and we take them very seriously. First of all and most importantly, we want to apologize for any inconveniences that you might have incurred, especially in the first week or so, with wait times, parking problems or any other issues that might have made your dining experience not quite what we wanted it to be for you. On the number one issue of the noise, we have had a number of acoustical engineers look into a solutions and we should have the final solution within a week or so. The water issue has also been addressed; first, on a temporary basis, we have installed three water coolers for drinking water. For a long term solution to the extremely hard water that we have here that makes the water taste off and the glasses spotty, next Monday we are installing a water softener and a carbon filtration system that should take care of all these issues. |

I know that the parking can be a bit of an inconvenience which is why we offer free Valet parking every day. For those who wish to self-park, please only park in the areas that are designated for the Broad Axe Tavern. We ask you not to park in front of the Shops of Blue Bell as the owner will have your car towed and we do not want to see that happen. We have an attendant every day in the lot to assist you and to help keep you from parking in unauthorized areas. Spotlight on Jeffrey Smith Our Executive Chef here at the Broad Axe Tavern is Jeffrey Smith. He is originally from this area and received his education from the Culinary Institute of America. Jeff has worked in the industry for quite some time and has an impressive resume. He has worked in several restaurants in Philadelphia The Continental Restaurant and martini Bar, part of the Starr Restaurant Organization. He has also worked in Baltimore at the Harbor Court Hotel. His goal for the Broad Axe is “good food made with local ingredients whenever possible in a casual setting.” Our featured recipe this month is our Beet Salad. |

Beet Salad Recipe (Serves 4-6) Two cups of Frisse lettuce and one cup of Romaine lettuce mixed together, 1 cup diced beets (beets are slow roasted in the oven until easily pierced with a knife, cooled, peeled, and diced) and one half cup of gorgonzola cheese. The Beet Salad is topped with our Roasted Garlic Lemon Vinaigrette. Roasted Garlic Lemon Vinaigrette 1 pt. fresh squeezed lemon juice 2 lemons – zested 1 TBSP sugar ¼ cup roasted garlic 1 qt. vegetable oil 1 Tsp finely chopped thyme 1. Combine lemon juice, zest and sugar in a bowl – mix until sugar is dissolved 2. Puree garlic and mix into lemon juice 3. Slowly add oil to lemon juice and garlic mixture to form an emulsion 4. Whisk in the thyme 5. Add salt and pepper to taste |

A Green Establishment
The environment is important to us at the Broad Axe Tavern, which is why we strive to do everything we can to make ourselves a green restaurant. For example, whenever possible we use locally grown produce. We also use Saratoga Water, which is a 100% green company. Our recycling ratio is 3:1 over trash, and we recycle whenever possible including cardboard, plastic, and glass. The decorative centerpieces on all of our tables feature bamboo to promote a healthy environment. We use the bamboo which is a renewable resource instead of using cut flowers which would have to constantly be replaced.
To be as efficient as possible our water heaters are from Bradford White right here in Ambler and are 98% efficient. Our kitchen floor, the floor behind the bar, and the walk in floors are made from 100% recycled vinyl. We also have refurbished stainless steel wherever possible in our kitchen equipment. In the renovation of the building we used low VOC paint, which is a non-toxic paint. All of our lights are powered with LED bulbs making them more efficient. Taking these steps is essential to keep our restaurant green and as environmentally friendly as possible. |

Broad Axe Partners Broad Axe Partners, Inc. is made up of Matthew Doman, Jay Chen, John Schieve, and Jerry Scheliga. This group is responsible for renovating the interior of building. The project was run by Tom Worthington of Worthington Contractors (Ocala, FL). ABA Services MPE (Collegeville, PA) headed by Glenn Eglinton handled the mechanical, plumbing, and electrical work with help from Sterling Mechanical and K. Reinford Plumbing. Security system by Advent Security. Our hardwood floors were done by Rich Weir. Broad Axe Partners, Inc. leases the building from Broad Axe Tavern, LLC. The shell of the building was rebuilt by Broad Axe Tavern, LLC run by Mike Barrist, Vic Meitner, and Tory Meitner. Broad Axe Tavern, LLC owns the building, along with the bank next door and the parking lot.
